    SPINACH AND APPLE SALAD

 

Ingredients:
2 tablespoons canola oil
1-1/2 teaspoons basil
1 teaspoon onion powder
½ teaspoon salt (optional)
1/8 teaspoon pepper
¾ cup apple juice


2 tablespoons apple cider
   vinegar
½ cup orange segments
4 cups spinach, torn in pieces
2 cups apple, thinly sliced

 

Preparation:
In a small bowl prepare the dressing by combining the oil, the basil, the onion powder, the salt and the pepper; set aside for 10 minutes to allow the flavors to blend. Stir in the apple juice and the vinegar. In a large bowl, combine the spinach, the apple and the oranges. Toss with ½ cup dressing; serve immediately. Refrigerate the remaining dressing for other salads or a marinade.

Makes 6 servings, each giving a simple carbohydrate.
