Recipe Modifications:
 
Instead Of...
 
Use...
1 tablespoon butter
1 tablespoon margarine or
3/4 T oil
1 c shortening
2/3 c vegetable oil
1 whole egg
2 egg whites
1 c sour cream
1 c yogurt (plus 1 T cornstarch for some recipes)
1 cup whole milk
1 c skim milk


 


     GREEN BEANS SAUTE

 


Green beans and onions are lightly sautéed in only 1 tablespoon of oil
 

 

Ingredients:
1 lb green beans, fresh or
   frozen, cut in 1-inch pieces
1 Tbsp vegetable oil
1 large yellow onion, halved
   lengthwise and thinly sliced


1/2 tsp salt
1/8 tsp black pepper
1 Tbsp parsley, fresh, minced


Preparation:

1. If using fresh green beans, cook green beans in boiling water for 10-12 minutes or steam for 2—3 minutes until barely fork tender. Drain well. If using frozen green beans, thaw first.

2. Heat oil in a large skillet. Saute onion until golden.

3. Stir in green beans, salt and pepper. Heat through.

4. Toss with parsley before serving.


Yield: 4 servings, Serving Size: 1/4 cup
